Job Summary

SUMMARY:

 

The Restaurant Supervisor is responsible for the execution of all aspects of food production in order to attract and retain gaming guests while contributing to the operating success of the Restaurant department as well as monitoring the work of other Restaurant staff.

 

 

ESSENTIAL DUTIES & RESPONSIBILITIES include the following:

 

  1. Assigns duties and responsibilities and oversees the quality of performance.
  2. Monitors the quality of food and the level of service provided by staff members.
  3. Assists with directing the overall food and beverage operations including but not limited to inventory control, food production, and planning menus to ensure a positive guest experience and quality of menu items.
  4. Analyzes information to ensure food selection increases guest satisfaction.
  5. Monitors proper sanitation of the kitchen, restaurant, storage, and rotation of stock. Make sure all food items are labeled with dates.
  6. Monitors staff and guests to ensure no one is overserved.
  7. Prepares all food items according to standard recipes and menu to ensure consistency and accuracy of product.
  8. Exhibits knowledge, understanding, and application of various cooking techniques.
  9. Prepares daily food specials.
  10. Exhibits knowledge of and the ability to prepare base sauces, stocks, and soups.
  11. Participates with staff to cook, prepare, plate, and assemble food.
  12. Demonstrates ability to work the line in different cooking stations.
  13. Operates kitchen equipment including slicer, steamer, deep fryer, ovens, broiler, grill, mixer, and flat top in a safe manner.
  14. Maintains a solid knowledge of all food products.
  15. Promotes positive public and employee relations among guest and staff members.
  16. Maintains proper inventory levels to match projected sales.
  17. Provides the restaurant staff direction, leadership, guidance, and proper counseling.
  18. Rotate positions within the department, or other positions as warranted to continue operations.
  19. Resolves all customer complaints in a timely and professional manner.
  20. Completes shift activity report, runs end of shift reports and all voids.
  21. Oversees and completes both daily and weekly cleaning and maintenance duties.
  22. Assist in any area that needs help in a timely manner.

 

  1. Checks front of house operation for proper procedures and fulfillment of duties as designated by Restaurant Manager.
  2. Assesses staff performance and deals effectively with employee discipline by following company policy and procedures.
  3. Perform all other duties to be assigned.

 

SUPERVISORY RESPONSIBILITIES:

 

  1. Assists with new and existing employee training.  Communicates and gains the support of employees for management policies and goals (ex. cost reduction and safety).  Creates a positive learning environment by delivering clear, specific, timely and respectful guidance, coaching and counseling.  Effectively resolves complaints, grievances, and other matters involved in the day-to-day administration.  Works to achieve the objectives of company personnel programs and policies.

 

  1. Carries out supervisory responsibilities in accordance with the Sugar Creek Casino’s policies and applicable laws.   Responsibilities include training employees; planning, assigning reviewing and directing work; evaluating and appraising performance; rewarding and disciplining employees; addressing complaints and resolving problems.

 

QUALIFICATIONS:

  1. Good interpersonal, customer service and communication skills.

 

  1. Must be able to obtain and maintain a gaming license.

 

  1. Must obtain a Food Handler’s Permit.

 

 

EDUCATION and EXPERIENCE:

 

  1. Graduate of a post high school two (2) year Culinary Arts School or equivalent technical training in food and beverage preferred.

 

  1. Five (5) years restaurant industry work, including two (2) to three (3) years progressive supervisory experience in food production preferred.

 

  1. Proven performance in implementing and maintaining food production operational standards.

 

  1. High School diploma or GED preferred.

 

 

LANGUAGE SKILLS:

 

Ability to read, analyze, and interpret general business periodicals, professional journals, technical procedures, or government laws and regulations.  Ability to write reports, business correspondence, and procedure manuals.  Ability to effectively present information and respond to questions from group of managers, clients, customers, media, and the general public.

 

 

MATHEMATICAL SKILLS:

 

Ability to work with mathematical concepts such as probability and statistical inference, and fundamentals of place and solid geometry.  Ability to apply concepts such as fractions, percentages, ratios, and proportions to practical situations.

 

REASONING ABILITY:

 

Ability to define problems, collect data, establish facts, and draw valid conclusions.  Ability to interpret an extensive variety of technical instructions in mathematical or diagram form and deal with several abstract and concrete variables.

 

OTHER SKILLS AND ABILITIES:

 

Basic analytical and deductive reasoning ability.  Must be competent in computer skills.  Must have superior interpersonal relations skills.  Must have superior planning and organizational skills, ability to manage complex projects and investigations.
